A simple recipe that I started making early in my journey was peanut butter. Peanut butter is something that my family enjoys and we use regularly. The reason I wanted to create this recipe is because some peanut butters contain preservatives, sugar, and hydrogenated oils.  Thus, I wanted to replace this type of peanut butter with something healthier. So when I am looking at creating my own version, I want to see if I can sneak in additional ingredients to get the added health benefits as well. Therefore, with the creation of this recipe I have added flax seeds and MCT oil to achieve this goal.

Health Benefits

  • Flax seeds – these seeds have been show to have various health benefits. Flax seeds are rich in antioxidants, which help remove the free radicals in our bodies. They also help with digestion and contain Omega 3’s.
  • MCT Oil – this oil has been shown to have many health benefits. Some of the benefits include weight loss, improve digestion, help support immune system, etc.

How to Make

In a food processor or Vitamix blender, add roasted peanuts (I use organic). Then add flax seeds and begin to blend. I will then begin to add MCT oil until I reach the desired consistency.

To Store

I store this peanut butter in a sealed jar and store in the pantry or refrigerator.
