Marshmallow Goodness! As the snow starts to fall, I begin to think of hot chocolate with ooey gooey marshmallows. This is a treat that I have enjoyed for many years. My mom would make it for us growing up after a hard day of playing in the snow in Northern Michigan. I now make it for my children.

The journey of making homemade marshmallows has been long. I previously made marshmallows using the Golden Syrup, Maple Syrup, and Honey recipes where you have to get to this magical temperature and me being an engineer, I like to do things exactly how the recipe tells me. Do not veer from these directions, which now I have learned to make the recipes my own and adapt if necessary to missing ingredients.

So when I came across a recipe for marshmallow fluff with no temperature requirements and simple ingredients, I was amazed! How can this be? So, I have adapted that recipe for our family and I am so happy. I can tell you that this recipe has been a game changer. It is easy to make and your family will enjoy it!

How to make Marshmallows

In a stand mixer with whisk attachment, add water and gelatin.

Mix gelatin into water and let sit for 10 minutes.

In the meantime; add water, sweetener, and salt to a pan to heat up until honey is dissolved and mixture is warm.

Add above mixture slowly to gelatin mixture on low speed. Then turn up mixer to high being careful not to spill mixture.

Mix for 10 to 15 minutes. Towards the end of the mixing add flavoring, such as vanilla or maple.

To Store:

Store marshmallows in a sealed container in the refrigerator. I have stored these in the refrigerator for at least a month.
