This is one of my family’s favorite soups to have during the fall/winter seasons. It brings warmth and comfort to our dinner. Below are the ingredients that I typically use when making this soup with approximate amounts. I hope you enjoy this soup as much as we do.

Ingredients

  • 1/2 medium onion, diced
  • 3 lbs of kielbasa sausage
  • 2 quarts of beef bone broth
  • handful of chopped kale
  • 2 cups of green beans
  • 2 cans of cannellini beans
  • 2 Tablespoons of nettle
  • 1 teaspoon of curry powder (turmeric)
  • 2 quarts of canned potatoes

Fry the onion and sausage together in butter.

Add onion, sausage, broth, kale, beans, nettle, and curry powder to crockpot.

Cook on high for several hours.

Add potatoes at the end to just heat up. If using uncooked potatoes, add an hour before or so before serving to cook the potatoes.
