Recently, I have started to make homemade granola as a replacement for store bought cereals. By making my own, I can control the ingredients that are being added.

This granola that I am have been currently making for my family has been a hit. It contains yummy pecans and silvered almonds and it is held together with delicious maple syrup and coconut oil.

Ways to use Granola

There are many ways to use granola but below are some of our favorite ways to use it:

  • Use as a replacement for cereal
  • Top your homemade yogurt with it
  • Top Acai bowls/smoothie bowls with it
  • Add to ice cream
I also like to add raw pumpkin and hemp seeds to my granola for additional health benefits.

Storage

Granola needs to be stored in an airtight container. This granola will last several weeks if it makes it that long. With two teenagers in my house, nothing last that long.

Ingredients

The following is the list of ingredients that you will need to make this granola:

  • 6 cups of rolled oats
  • 1 cup chopped pecans
  • 1/4 cup silvered almonds
  • 2 cups coconut chips
  • 1/4 cup butter, melted
  • 1/2 cup coconut oil
  • 2/3 cup maple syrup
  • 1/2 cup packed brown sugar
  • 1 1/2 teaspoon Himalayan salt
  • 1 heaping teaspoon ground cinnamon
  • 1/2 teaspoon vanilla

Instructions

  • In a large bowl, combine rolled oats, pecans, almonds, coconut chips, brown sugar, salt, and cinnamon.
  • In a saucepan add the butter and coconut oil – heat until everything has melted. Then add maple syrup and vanilla to this mixture.
  • Add this mixture to the large bowl to combine the dry and wet ingredients together. Mix well.
  • Pour the granola onto a large baking sheet lined with parchment paper. Spread out evenly.
  • Bake at 300°F for 45 minutes to 1 hour, or just until golden brown. Do not stir.
  • Remove from oven and let cool completely.
  • You will need to break the granola into smaller clumps for storage. Place in airtight container to keep fresh.
Granola that is cooling down to store in airtight container.
