Blueberry Kefir Breakfast Cake

Ingredients
  

  • 4 cups AP flour I used freshly milled soft white flour
  • 2 cups kefir
  • 3 tsps baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2/3-3/4 cup maple syrup
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 cup butter melted
  • 2 cups blueberries; frozen I topped with fresh blueberries as well

Crumble Topping Mixture

  • 2/3 cup AP flour I used fresh milled einkorn
  • 2/3 cup maple sugar
  • 6 tbsp butter softened

Instructions
 

  • Mix flour and kefir together and let sit overnight
  • Then mix additional dry ingredients and mix together
  • Then add wet ingredients and mix together
  • Add blueberries until everything is combined
  • Pour batter into a prepared 9×13 pan then add fresh blueberries(optional)
  • Make crumble topping – with flour, sugar, and butter.
  • Add to the top of cake mix.
  • Bake in oven at 350F for 45-60 minutes; until toothpick inserted into center of cake comes out clean.
  • Don't forget to let it cool before slicing into the cake.
