Blueberry Kefir Breakfast Cake
Ingredients
- 4 cups AP flour I used freshly milled soft white flour
- 2 cups kefir
- 3 tsps baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2/3-3/4 cup maple syrup
- 2 large eggs
- 1 tsp vanilla
- 1/2 cup butter melted
- 2 cups blueberries; frozen I topped with fresh blueberries as well
Crumble Topping Mixture
- 2/3 cup AP flour I used fresh milled einkorn
- 2/3 cup maple sugar
- 6 tbsp butter softened
Instructions
- Mix flour and kefir together and let sit overnight
- Then mix additional dry ingredients and mix together
- Then add wet ingredients and mix together
- Add blueberries until everything is combined
- Pour batter into a prepared 9×13 pan then add fresh blueberries(optional)
- Make crumble topping – with flour, sugar, and butter.
- Add to the top of cake mix.
- Bake in oven at 350F for 45-60 minutes; until toothpick inserted into center of cake comes out clean.
- Don't forget to let it cool before slicing into the cake.
